New Roads to Krotz Springs and beyond5

I am always eager to go home to Louisiana. I had the good fortune to go to Krotz Spring, LA to get the famous Boudin at Billy's right off Hwy. 190 after you cross the Atchafalaya River on the right. I have a girlfriend that lives in Baton Rouge, LA and every Friday she goes to Billy's to get her some Boudin. Boudin is a rice and pork mixture with lots of Louisiana seasoning all stuffed into a casing like sausage. It is great steamed in the microwave, you can put it in a crock pot with a little water and let it steam, or in a pot with a little water. The links will fluff up because of the rice. Billy's is also well known for it's cracklings (hog cracklings) that is. Across the street on the opposite side of Hwy. 190, is a little dinner called Cajun Corner Caf that has some authentic Cajun food like, hush puppies, red beans and rice, shrimp balls, deer and pork balls, crawfish pies, chili or jalapeno corn dogs, red bean pie and a smothered chicken pie, all are delicious. I just love my Cajun heritage. Please visit our very friendly state if for no other reason than the food. Your taste buds will be very delighted, be a warrior and try new things and if you don't like something, then you will be able to say that you tried it but didn't like it.
